I'm thinking this might be the perfect summer kick off! YUM!
Ingredients:
• ¼ cup plain Greek yogurt
• 1 Tbsp. raw, unfiltered honey
• 1 to 2 tsp. fresh lime juice
• ½ tsp. grated lime peel
• ¼ tsp. pure vanilla extract
• ½ cup cantaloupe, diced
• ½ cup honeydew melon, diced
• ½ cup watermelon
• 2 Tbsp. mint leaves, finely chopped
Preparation:
1. Combine yogurt, honey, lime juice, lime peel, and vanilla extract in small bowl. Mix well and set aside.
2. Place cantaloupe, honeydew melon, and watermelon in medium bowl. Drizzle with sauce. Toss gently to blend.
3. Garnish with mint. Serve immediately
